Ahh, the joy of sharing recipes, plating meals, and sneaking in taste tests! While I’m not filming episodes at the moment, my love for cooking is still going strong. The other day, I made skillet/fried potatoes that had me moaning! LOL! Literally! What’s better than a dish that’s crispy, savory, and oh-so-satisfying? Let me set the scene: golden fried potatoes seasoned to perfection, paired with sautéed green peppers and onions, topped with a fried egg dripping with melted colby jack cheese. Mmmmmm! Can you say comfort on a plate?

What I love about this dish is how versatile it is. It’s the perfect breakfast, brunch, or even dinner idea. It’s also budget-friendly and can be customized to your heart’s (or should I say taste buds) desire. Want to add sausage, mushrooms or bacon? Go for it! Prefer a crab cake on top, instead? That’ll work too.

recipe: fried/skillet potatoes with green peppers + onions
ingredients
◦ olive oil
◦ potatoes (3)
◦ kosher salt
◦ freshly ground black pepper
◦ cayenne pepper
◦ red pepper flakes
◦ garlic
◦ cajun season
◦ parsley (color and garnish)
◦ yellow onion (1)
◦ green peppers (1)
◦ egg
◦ colby jack cheese
instructions
◦ Heat the oil in a large skillet over medium heat. Add potatoes. Stir to coat. Season with kosher salt, freshly ground black pepper, cayenne pepper, red pepper flakes, garlic, cajun season, parsley (color and garnish) and stir again. Spread potatoes across the skillet and add 2 tablespoons of water to the pan.
◦ Cover with a lid and let cook for about 10 minutes, stirring every few minutes and then spreading the potatoes out again. You want the potatoes to get brown and crispy on the sides.
◦ Add onions and stir to coat! Let cook until onions are slightly brown!
◦ Add the peppers and stir to combine. Continue cooking, stirring every few minutes for another 5-10 minutes. Taste and season as needed.
◦ In a separate pan fry your egg. Season to taste and then add a slice of Colby Jack cheese until melted.
◦ Plate the fried potatoes, add the egg on top, garnish with parsley for color!
◦ Serve immediately or cool and refrigerate until ready to serve. To reheat, simply warm them in a skillet over medium heat until hot again.
◦ Add ketchup or hot sauce for even more flavor!
